With over four decades of experience across the globe, Chef Mark William Allison is an internationally celebrated chef consultant, dynamic culinary educator, and wellness innovator whose passion for food goes far beyond the plate. Chef Mark has worn many hats: Director of Culinary Nutrition at the Dole Nutrition Institute, Dean of Culinary Arts at Johnson & Wales University, author, health coach, and brand ambassador for premium, sustainable food products. But his true gift lies in showing people how food can heal, empower, and connect us all—especially during midlife and beyond.
A passionate advocate of food as medicine, Mark’s most personal mission began when his late wife Alison was diagnosed with terminal cancer. Through love, knowledge, and nourishing meals, he helped extend her life from 3 to 8 incredible years—a journey that still fuels his purpose today as founder of “Fork Cancer: A Celebration of Life,” a beloved annual charity event in Charlotte, NC, where top chefs come together to raise awareness and funds for local cancer organizations. In addition, as founder of “Midlife Wellness & Beyond,” Mark helps individuals reclaim their vitality through the powerful synergy of whole food, movement, and mindfulness.
Mark’s remarkable career includes developing recipes for global partnerships with the Walt Disney Company on blockbusters like Star Wars, Cars 3, and Beauty and the Beast, and creating cutting-edge culinary content backed by nutritional science. His expertise has earned him prestigious honors—from being named “Father of the Year” by the American Diabetes Association, to receiving a personal commendation from former UK Prime Minister Tony Blair for his contribution to education and hospitality.
